The BEST Quince Drizzle Cake

So recently we've hosted quite a few dinner parties/gatherings and I've discovered the BEST recipe for a homemade quince drizzle cake which is perfect to use up any leftover quinces from the summer. If you do not grow quinces, you can easily find quince paste or jelly in your local grocery store. It is extremely easy to make, you need little experience, and tastes divine!
WHAT YOU'LL NEED:
For the Cake
175g unsalted butter (room temp)
325g self-raising flour
325g self-raising flour
200g quince paste or jelly
3 medium eggs (room temp)
175g golden caster sugar
For the Drizzle
125g icing sugar
50g quince paste of jelly (melted)
2.5 tsp freshly squeezed lemon juice
METHOD:
Preheat the oven to 170 degrees Celsius. Cream together the butter and sugar using a wooden spoon or electric hand mixer until light and fluffy, it should be a pale cream colour. And the eggs, one by one, mixing in between. Slowly add the flour gradually, stirring carefully with a wooden spoon. Pour the batter into a rectangular metal, or silicone loaf tin. Swirl in the quince jelly or paste slowly with a skewer or teaspoon, a bit like a marble cake. Pop it into the oven for about an hour. Don't be alarmed, the cake will go slightly brown on the outside, but this is just the quince swirled in! To check that it's fully done, insert a skewer into the middle, if it comes out clean, it's done.Leave the cake to cool slightly whilst you make the glaze. It's quite nice to serve it warm, that way you get the cozy, wintery feeling from it and the delicious smell wafting through your kitchen. To make the drizzle you simply mix together the icing sugar and lemon juice together and then add the melted quince jelly or paste. It should be a runny, glossy texture but you can always add a bit more lemon juice or icing sugar to make the desired consistency.
